Grapes for the Kaapzicht Skemerlig Cabernet Sauvignon 2021 were sourced from vines planted in 2001 on weathered granite soils, on the only North West facing slope on the farm, thus promoting cooler ripening temperatures. Hand harvested and fermented until dry on skins after the must was inoculated with a cultured biodynamic yeast. The wine is pressed gently and stored in tank until after malolactic fermentation is complete. Thereafter the wine is aged for 18 months in a mixture of 52% new, 35% second- and 3% third-fill barrels. Residual sugar: 3g/l. Bottled at 14%. (Bottle size 750ml)
Nose: This wine boasts a generous nose of graphite, blackcurrants and dusty herbs. Elegant dark fruits and an intense perfumed nose makes this icon truly special.
Palate: Rich fruit forward entry with notes of blackcurrant, mulberries and dates. Mid-palate has a more dried herbs, fynbos and fennel character with an intriguing inky succulence.
Finish: Firm fine tannins with long lingering notes of cedar oak.
