McFarlane Capitoline Wolf Rosé 2022 is produced from a blend of 80% Cinsault and 20% Semillon. The Cinsault comes from an old bush-vine block planted on a farm in the Breedekloof called Orleans farmed by Kowie Stofberg, and the Semillon comes from Bot River. Grapes were chilled overnight and whole-bunch pressed to a stainless steel tank the following morning. The juice is pressed to the same tank and allowed to settle gently overnight. From here the juice was racked to big old French oak barrels where it was allowed to ferment naturally. Once the wine was dry, it was stirred on the gross lees for 9 months without sulphur. Just before bottling it was racked, blended with the Semillon, sulphured up and protein stabilised. The wine was gently filtered before bottling. Residual sugar: 2.7g/l. Bottled at 11.5%. Nose: Warm spice and bright florals jump out of the glass.
Palate: Follows through from the nose with lovely savoury spice and hints of perfume. A little burst of cranberries and subtle hints of aniseed sweet spice.
Finish: Bright refreshing acidity with lingering notes of fennel.
