Named after Francois Rabelais, a sixteenth century French writer whose first novel describes an abbey on the banks of the Loire named Thélème where only one rule was observed: "Do what thou wilt!" Thelema Rabelais 2020 is produced from a blend of 90% Cabernet Sauvignon and 10% Petit Verdot grape varietals. Harvested on 28 February 2020 (Cabernet Sauvignon) and 8 March 2020 (Petit Verdot) from vineyards planted in 2002 and 2003. De-stalked and hand-sorted, whole berries are pumped into stainless steel fermentation tanks and pumped over twice a day until dry. After fermentation the wine is left on the skins for 12 hours before pressing. Once pressed wine is racked to barrel for malolactic fermentation. Matured for 18 months in 100% new 225-litre French oak barrels. Residual sugar: 2g/l. Bottled at 14.5%. (Bottle size 750ml)

Nose: Concentrated aromas of dark berries and cedar wood.

Palate: Lovely sweet fruit and polished tannins on the palate.

Finish: The wine finishes long and firm and will reward cellaring.
