In 2015, the Grier family of Villiera decided to combine all their experience to create something special for their release in 2024 to celebrate 40 years of producing Cap Classique, and Villiera Pithos Brut CC 2016 was the result. Only healthy Chardonnay grapes were picked by hand and delivered to the cellar in whole bunch form. At the pressing stage, only the purest, first portion of the juice to run off was used. It was then fermented in a large locally made clay container, called a Pithos. Matured on the lees after the second fermentation for an extended period of 7 years. Residual sugar: 3.8g/l. Nose: A rich, creamy, yeasty nose.
Palate: A refreshing flavour on the middle palate.
Finish: Finesse and complexity on the aftertaste.
