The Restless River Chardonnay 2023 was crafted from grapes sourced from newer vineyards, planted between 2017 and 2020, situated in the Upper Hemel-en-Aarde Valley. The grapes were whole-bunch pressed using a Vaslin basket press, with juice naturally oxidised and no sulphites added. It underwent spontaneous fermentation, maturing on its lees for 11 months in older 500-litre Burgundy barrels (5% new oak). The wine was vinified separately from three vineyards to match specific barrels and coopers. It was then aged for 3 months in stainless steel and 9 months in the bottle before release. Residual sugar: 1.59g/l. Bottled at 13%. (Bottle size 750ml)

Nose: A captivating bouquet unfolds with aromas of ripe citrus fruits, green apple, and a touch of white peach. Subtle undertones of toasted almonds and a hint of flint add complexity to the aromatic profile.

Palate: The palate is elegantly structured, showcasing flavours of lemon zest, crisp pear, and a whisper of tropical pineapple. A delicate integration of oak imparts nuances of vanilla and a gentle creaminess, enhancing the wine's depth without overshadowing its vibrant fruit character.

Finish: The finish is clean and refreshing, marked by a bright acidity that underscores the wine's minerality with lingering impression of citrus and a faint echo of toasted nuts.
