Holden Manz Elysium 2020 is produced from a blend of 50% Merlot and 50% Syrah. The fourth vintage of this unique co-fermented wine is only possible due to the rare occurrence of Merlot and Syrah ripening at the same time on the Holden Manz farm in Franschhoek. The individual varietals were hand-picked on 17 March 2020 and then hand-sorted allowing only the most optimally ripe berries to be used for this wine. Three brand new 225-litre French oak barrels with medium toast were filled with a mix of Merlot and Syrah berries. The barrels were rolled regularly until spontaneous fermentation occurred. Cuvaison took place over approximately 50 days. Matured for 24 months in new French oak barrels. Bottled at 14.5%. (Bottle size 750ml)
Nose: The nose is deeply alluring, with aromas of dark berries like blackberry and blackcurrant leading the way. Subtle floral notes of violet intertwine with earthy undertones and hints of cedar, mocha, and sweet spices such as clove and cinnamon.
Palate: The palate is full-bodied and opulent, delivering a rich tapestry of flavours, including ripe black cherries, plums, and a touch of dried fig. Layers of dark chocolate and a gentle smokiness from well-integrated oak add depth and sophistication.
Finish: The finish is enduring and complex, with fresh acidity lifting the darker fruit notes and balancing the wine's richness. The fine-grained tannins emerge here, adding a structured grip that complements the lingering hints of spice and graphite, leaving a polished and satisfying impression.
