The Oldenburg Vineyards Series is a true expression of terroir through a range of single cultivar wines and the confluence of the 8 natural elements that determine the unique terroir is explored through these wines. The 8 elements are depicted on the intricate Oldenburg Vineyards Series label design. Grapes for the Cabernet Sauvignon 2019 were harvested 18 to 20 March 2019 at 23.5° Balling, hand-picked in small lug boxes and kept overnight in a cool room. The following day, they were destemmed, crushed, and meticulously hand-sorted on a sorting table. A 5-day cold soak followed to enhance flavour extraction, with 1 to 3 pump-overs performed daily. During fermentation, the wine was racked twice. It was then aged for 18 months in 225-litre and 300-litre French oak barrels, with 27% of the barrels being new. 14,658 bottles were produced. Residual sugar: 2.5g/l. Bottled at 13%. (Bottle size 750ml)
Nose: A deep, inviting bouquet unfolds with an opulent core of ruby allure. Rich layers of black cherries, velvety black plums, and vibrant blackcurrant intertwine with subtle hints of baking spice, the warmth of a well-worn cigar box, and a delicate wisp of lavender, creating an irresistibly sophisticated aromatic profile.
Palate: On the palate, the wine reveals a beautifully defined structure where lush dark fruit seamlessly melds with nuanced spice and an undercurrent of minerality. The texture is refined and poised.
Finish: The finish is emphatic and enduring, with lingering notes of dark fruit and wood spice. Fine, integrated tannins add a precise grip, ensuring a balanced and elegantly structured conclusion.
