The Salt Rock Red Blend features Merlot, Cabernet Sauvignon, Cabernet Franc, Petit Verdot, Shiraz, and Cinsault. Grapes were selected based on their potential rather than their region, with blocks sourced from the cooler parts of the Western Cape to encourage slow ripening. All batches were picked at optimal ripeness, and the grapes were cooled before processing. The cultivars underwent fermentation in open-top fermenters with four punch-downs per day. The wine was matured in 300-litre second- and third-fill barrels, blending vintages from 2021, 2022, 2023, and 2024. Residual sugar: 2.2g/l. Bottled at 14.94%. (Bottle size 750ml)
Nose: A rich and expressive nose of blackcurrant, mulberry, and ripe plum, lifted by aromas of cedarwood, cigar box, and a hint of dark chocolate shavings, creating a brooding yet polished aromatic presence.
Palate: Bold and layered, showing a plush core of black cherry and cassis, interwoven with notes of mocha, clove, and a whisper of charred oak. There’s an effortless generosity to the fruit, balanced by savoury nuances that give it a classic, full-bodied appeal.
Finish: Long and commanding, with velvety, powdery tannins framing the finish. The structure is refined, and the acidity discreet yet supportive, allowing the wine’s impressive depth and complexity to unfold with poise and persistence.
