Salt Rock El Niño Cinsault 2023 was crafted from hand-selected grapes grown in Stellenbosch, originating from old bush vines in the Helderberg region. These vines flourish in deep granite soils, which naturally produce low yields while maintaining excellent acidity. Emulating the classic Beaujolais style, the wine features 40% whole-bunch fermentation and undergoes a single daily punch-down to achieve a gentler extraction of flavours. Spontaneous fermentation highlights the unique characteristics of both the site and the variety, followed by maturation in a concrete egg to preserve its focused core, with 15% of the wine aged in an old 500-litre oak barrel for added complexity. Residual sugar: 1.5g/l. Bottled at 12.94%. (Bottle size 750ml)

Nose: The wine shows notes of cinnamon spice, cherries raspberries and brambles.

Palate: The tannins are soft and velvety with a great acid to give some great mid-palate tension.

Finish: A long juicy finish.
