Named after Dom Pérignon, a monk and cellar master at the Benedictine abbey in Hautvillers who pioneered a number of winemaking techniques around 1670, Dom Pérignon Champagne is always a vintage champagne, meaning that all grapes used to make the wine were harvested in the same year. Produced by Dom Pérignon’s cellar master Vincent Chaperon, Dom Perignon Rosé 2009 is crafted from a blend of 56% Pinot Noir and 44% Chardonnay, with approximately 15% still red wine sourced from the villages of Hautvillers, Aÿ, and Bouzy. The grapes are hand-harvested and undergo a gentle pressing to extract the juice. The first fermentation takes place in stainless steel tanks, followed by a second fermentation in the bottle, which creates the fine bubbles characteristic of Champagne. The wine is aged for at least 8 years on the lees before disgorgement, enhancing its complexity and depth of flavours. Residual sugar: 5g/l. Bottled at 12.5%. (Bottle size 750ml)
Nose: A bouquet of rose, orange oil, and saffron, followed by red fruit aromas such as raspberry and cherry, with sombre touches of cassis and fig.
Palate: The palate is marked by a smooth and round initial mouthfeel, with flavours of red berries, citrus zest, and subtle hints of spice.
Finish: A long, elegant finish.
