Produced from 100% Chardonnay, this Blanc de Blancs is a blend of 15% Grand Cru fruit from Oiry and Chouilly, and 85% Premier Cru fruit from Mareuil-sur-Aÿ. Each parcel is vinified separately and gently pressed using a Bucher press. Fermentation takes place in glass-lined stainless steel and ceramic tanks, with some older vine parcels undergoing barrel fermentation and indigenous yeast fermentation. These parcels are aged in 205-litre, four-year-old barriques without bâtonnage. The wine matures in bottle on its lees (sur lattes) for 36 months, enhancing complexity and texture. Residual sugar: 6g/l. Bottled at 12.5%. (Bottle size 750ml)
Nose: Bright and expressive, showcasing aromas of fresh green apple, lemon zest, and white peach. Subtle floral notes of acacia and hints of brioche and toasted almond add complexity, reflecting its time on lees.
Palate: A refined mousse delivers flavours of citrus fruits - lime and grapefruit - alongside crunchy pear and a touch of honeyed apple. Gentle chalky minerality adds depth and elegance to the palate.
Finish: Long and refreshing, with lingering notes of citrus zest, soft brioche buns, and toasted almonds. The crisp, vibrant acidity shines here, leaving a mouthwatering sensation that invites another sip.
