Produced from a blend of 70% Pinot Noir (Mareuil sur Ay, Avenay) and 30% Chardonnay (Bisseuil, Mareuil-Sur-Ay) grapes for the Marc Hebrart Premier Cru Selection Champagne are harvested from vineyards planted more than 40 years ago. Each parcel of grapes is vinified separately and gently pressed using a Bucher press. Fermentation occurs in glass-lined stainless steel and ceramic tanks. Some older vine parcels undergo barrel fermentation and indigenous yeast fermentation. Old vine parcels are aged in 205-litre 4 year old barriques (without batonnage). The wine matures on its lees (sur latté) for over 30 months to develop complexity and texture. Bottled at 12.5%. (Bottle size 750ml)

Nose: Aromas of citrus oil, white flowers, and fresh pastry.

Palate: Lightly chalky in texture, this firm Champagne has mouthwatering acidity and flavours of apricot, yellow plum, star anise, shortbread biscuit and candied lemon zest.

Finish: Deftly balanced, with a long, vibrant finish.
