The Pinot Noir and Chardonnay grapes for the Il Geco Cap Classique 2018 were handpicked and co-pressed. Fermentation and malolactic conversion occurred in a temperature-controlled stainless steel tank. The base wine matured on fine lees for seven months before undergoing secondary fermentation (tirage) on 7 June 2018. After six years of aging on lees, the wine was disgorged in March 2024. 1,450 bottles were produced. Residual sugar: 2.4 g/l. Bottled at 11.5%. (Bottle size 750ml)

Nose: An inviting bouquet unfolds with clean, fresh aromas of lemon zest, bruised Granny Smith apple, and ripe strawberries, complemented by delicate hints of citrus blossom.

Palate: The palate is lean and precise, revealing a mineral and flinty character reminiscent of crushed oyster shells. Bright acidity underscores the flavours of lemon and subtle red berries, leading to a finely textured experience.

Finish: The finish is crisp and refreshing, with the bright acidity seamlessly integrating with a fine-beaded mousse. Subtle brioche notes emerge, adding a creamy depth that lingers, leaving a lasting impression of elegance and finesse.
