Grapes for the Salt Rock La Niña Semillon Gri 2023 were sourced from a vineyard in the Swartland region, nestled on the slopes of the Paardeberg. The area's unique climate and altitude contribute to a slow ripening process, resulting in fruit rich in flavour. Harvesting was done by hand in the early hours of the morning to ensure optimal ripeness. After destemming, the grapes underwent skin contact for 3 days before pressing to separate the juice. Spontaneous fermentation took place in a concrete egg, and the wine was left on the lees for several additional months. Malolactic fermentation occurred naturally, after which the wine was racked off the gross lees. Bottled without filtration or stabilisation, preserving its natural character. Residual sugar: 1.1 g/l. Bottled at 12.48%. (Bottle size 750ml)

Nose: An expressive bouquet of ripe yellow peach and nectarine, underscored by warm cinnamon spice and a subtle hint of dried citrus peel, offering a heady and alluring aromatic profile.

Palate: Broad and textural, with generous stone fruit flavours layered over a savoury edge. Notes of apricot skin, preserved lemon, and a gentle earthiness add complexity, all carried by a slightly waxy, mouth-coating grip from extended skin contact.

Finish: A persistent, mineral-driven finish, where fine-grained tannins provide structure and a clean line of acidity brings lift and energy. The concrete fermentation amplifies the wine’s sense of place, echoing the stony soils of its origin with clarity and restraint.
