Grapes for the Terre Paisible Les Dames de 1987 Old Vines Sauvignon Blanc 2023 were harvested from 35 year old vines. After whole bunch pressing and minimal settling, the wine was fermented in stainless steel and 500-litre French oak barrels, maturing on lees for 9 months prior to bottling. Residual sugar: 2.8g/l. Bottled at 13%. (Bottle size 750ml)

Nose: The wine opens with a luminous bouquet of lemon zest and crunchy herbal notes, interlaced with a subtle hint of ripe green fig that reflects the character of its 37-year-old vines.

Palate: On the palate, a bright, sherbet-like acidity elevates layers of vibrant citrus flavors. The sur-lie maturation lends the wine a rich, nuanced texture, perfectly balanced by the delicate influence of French oak.

Finish: The finish is long and elegant, with lingering fig nuances gracefully complemented by a delicate whisper of asparagus that adds intriguing complexity.
