Testalonga El Bandito I Wish I Was A Ninja 2024 is a sparkling white wine produced from Colombard grapes. These grapes were harvested from a vineyard planted in 1972, located in the Paardeberg area of the Swartland region. The vines are organically farmed, focusing on sustainability and eco-friendly practices. After being chilled overnight to 6°C, the grapes were processed the following day and whole bunch pressed into stainless steel tanks. The juice underwent six rackings and was kept at 2°C for 30 days before the tank temperature was gradually increased. At a sugar level of 55 g/l, the wine was bottled to finish fermentation in the bottle until pressure brought it to a stop. The wine was then aged on its lees for 10 months, disgorged, and sealed with a crown cap. 10,500 bottles were produced. Residual sugar: 30g/l. Bottled at 8.5%. (Bottle size 750ml)

Nose: An enticing bouquet unfolds with vibrant notes of exotic litchi, crisp pear, and sun-kissed peaches. The aroma carries a subtle hint of floral freshness.

Palate: On the palate, the wine is light and playful - airy strands of candy floss sweetness mingle with juicy fresh apples, pear, and litchi.

Finish: The finish is soft and easy, defined solely by a refreshing burst of bright acidity and delicate mousse that carries the lingering fruity essence, leaving a clean and delightfully fruity aftertaste.
