Grapes for the Restless River Pinot Noir were sourced from newer vineyards, planted between 2017 and 2020, situated in the Upper Hemel-en-Aarde Valley. Grapes were destemmed and underwent whole-berry fermentation in open-top fermenters with spontaneous fermentation. A combination of gentle pump-overs and punch-downs was employed to extract flavour. After soft basket-pressing, the wine was aged for 12 months in Burgundy 228-litre barrels (20% new) and further aged in the bottle for 10 months before release. Residual sugar: 1.9g/l. Nose: The wine opens with an expressive bouquet of bright red cherry and raspberry, interlaced with delicate floral nuances and a subtle hint of summer pudding that adds a touch of elegance.

Palate: On the palate, it reveals a refined profile where vibrant red fruit flavours are complemented by understated earthy undertones and a whisper of spice. The texture is graceful and well-structured, capturing both immediacy and finesse.

Finish: The finish is long and precise, defined solely by a refreshing burst of bright acidity and fine, integrated tannins that lend a structured, enduring conclusion.
